Upon waking up this morning, I made my usual stove-top oats with frozen banana/flax/chocolate chips and had a side of strawberries. Surprising, huh?! I just never get tired of this breakfast, and I kind of wish I would so I can make all of the other things I’d like to make for breakfast (like chocolate chip pancakes.. mmm!)

I don’t have much planned for the day once again; I’ll basically be relaxing at home with my coffee and cookbooks. Sounds perfect to me.

For dinner tonight, I whipped up a serving of whole wheat couscous and topped it with some homemade ratatouille i had made last night. It was great, especially since I added boca ground to the vegetable mixture.. yum! I accidentally added a bit too much water to the couscous, so it didn’t soak up the water that well and was a bit mushy; but it didn’t affect the taste luckily.

For dessert, I made my famous ‘peanut butter cup panini’. This dessert simply can’t be beaten! I also snacked on a 100 calorie pack of kettle korn popcorn while relaxing on my couch reading Veganomicon.. such a great cookbook, I’m looking forward to trying out some recipes.

Before I went to the doctor in the pouring rain (eck!), I made myself the best smoothie using almond milk, frozen banana, peanut butter and ground flax. Filling and delicious! I also had a Larabar (cocoa mole flavor which was fabulous!) to hold me over until my late dinner.
