What a day!! I feel like I had absolutely no time to myself. Oh well… tomorrow is a new day, and hopefully it will be a better one!
After my appointment, I headed to whole foods to get some essential ingredients for some dishes I plan on making this week. I’m excited already to get in the kitchen and do some experimenting! I just love cooking so, so much.
When I got home, it was already 6:00, so I started the cooking process of my meal, and snacked on a banana with 1 tbsp of peanut butter to hold me over. Tonight, I made Heidi Swanson’s Lemon Scented Quinoa with Chickpeas and Red Onions with a tahini-lemon dressing. Considering I had no tahini on hand, I substituted it with some hummus! I also used rosemary infused olive oil rather than extra virgin. The salad turned out fabulous; I just love Heidi’s wholesome, healthy recipes. They’re so out of the ordinary and unconventional which I very much admire. I had my quinoa salad with some steamed sugar snap peas and cauliflower which I tossed with some whipped earth balance spread. It was delicious, healthy, and very filling.
For dessert, I had another one of my dense, decadent vegan chocolate chunk brownies (which I devoured way before I even thought of photographing!) followed by some amazing vegan peanut butter chocolate gelato. Is that a perfect way to end the night or what?! You should all really consider trying some for yourself. If anyone is interested, you can purchase the gelatos online at gelatobymail.com. It would be money well spent, especially considering Blackwell’s Organic is an up-and-coming company that is trying to get their fabulous products out there! Not only will you be helping them out, but you’ll send your tastebuds on a trip to the heavens. ;)
Tomorrow, I plan on making a special vegan french toast breakfast that I’m really excited about! See you all in the A.M!
School today was a drag as usual. And the crappy weather didn’t help a bit! I’m just glad that I’m home now and can relax for most of the remaining of the day (except for having to go to an appointment soon).
For lunch, I made a fast and messy wrap that didn’t want to close! I stuffed it with spinach, honey mustard, shredded carrots, cucumber, soy feta, and some of this cedar’s chickpea salad I found at whole foods the other day. It was filling and delicious. I had my usual side of pita chips, and some sliced mango which was a real treat! I loveeee mango, and this one happened to be really sweet.
I’m on my way out now, and then I’m headed to my local health food store to pick up some groceries and ingredients for some meals I have planned for the week. See you all for dinner!
