Today is the last day of my school week, which of course I’m thrilled about. I don’t have much planned for today other than school, and coming home to relax. I am pretty much in a crummy mood today, so maybe I really should get out and do something productive, like try to find a prom dress to get my mind off of things. Although I don’t think it’ll help much.

Anyway, I started my day off with a peanut butter/raspberry preserves/banana waffle sandwich that I squirted some maple syrup in. It was delicious and filling, and exactly what I was craving. There’s nothing like a good ‘ol pb waffle sandwich.

I’m bringing a banana nut odwalla bar to school today to snack on. I absolutely love these bars.. they’re so flavorful and moist, and the texture is perfect. Yum.

My stomach has been totally out of whack for these past two days! Yesterday I was hungry all day long, and today, I feel totally stuffed!

For lunch, I had made some more ED&BV Goddess Garbanzos and put them in a sandwich with some baked tortilla chips and some grapes. It tasted delicious, but after I ate it, I felt absolutely crazy full, so much so that I felt my stomach was contracting! It was very uncomfortable, and I don’t know exactly why my stomach reacted like it did considering I’ve had these before. Weird!

I went out for a while with my friends after lunch, and didn’t get home until around 6:30 which is when I started on dinner. I decided to make some “chicken” parmesan inspired by Jenna’s parmesan chickpea cutlet from last night. I used two quorn cutlets, smothered them in roasted vegetable sauce, topped them with some veganrella, and popped them under the broiler for about 5 minutes. It was so easy to make, and came out perfect! I had some whole wheat couscous and roasted asparagus on the side along with a side salad with cucumber, red pepper, avocado, and goddess dressing. I could only finish 1 of the cutlets, 1/2 of the couscous, most of the asparagus, and half of the salad! I usually have a huge appetite, and could easily finish this meal, but tonight, my stomach was just in an unusual state! I ate a lot less than usual, and yet, can’t even think about eating another thing. Oh well, I guess we all have these kind of days!

Tomorrow is “Friday” for me, YAY!!! I’m so excited to have a four day weekend, I couldn’t ask for anything better. I’ll see you all in the morning!
