I had a very nice, but quite hectic Saturday. I went to visit my grandfather this morning to help him with a few things, and then I went to the gym to get a quick workout in. I did a 30 minute routine on the elliptical, and then did some toning exercises for my legs, and some ab exercises. I left the gym feeling rejuvenated and energized. When I got home, I made a faaaaabulous fruit smoothie! I added 1 small champagne mango, some pineapple chunks, frozen peaches, frozen strawberries, 1 frozen banana, 1 kiwi, and 1/2 cup of almond milk. I blended it all up, and I was in fruit heaven. I, of course, ate it with a spoon in a bowl like a chilled fruit soup. So much better this way!
I was still pretty full from my smoothie, so I just made a small lunch. I had a small cup of sweet potato soup (I used the recipe from The Happy Herbivore) with a piece of hot Rosemary Foccacia (so amazing!) and a dollop of hummus. It was the perfect size for my not-so-hungry belly.
For dinner, I made ED&BV’s Sweet Potato Lentil Stew for the second time, and it came out just as great as it did the first time I made it. I added some tomato paste this time for a more rich and prominent tomato flavor, and it made it all the more better. I served it with a dollop of spicy guacamole on top. On the side, I had some roasted asparagus, and one of my favorites EVER, plantains! It gave such a colorful presentation, and was just so delicious! I had every last bite, and cleaned my plate (and bowl!)
I decided to have another one of my chocolate peanut butter banana smoothies for dessert, but this time I served it in a bowl for maximum longevity. ;)
Tomorrow, I’m planning on making some crazy delicious pancakes that will incorporate my three favorite foods (if you haven’t figured them out by now, chocolate, peanut butter, and banana!).. I can’t wait!! I even bought a griddle pan today which will make pancake/french toast making a lot easier!

I’ve actually never tried plantains before – now I REALLY want to give them a try!! They look marvelous with your dinner!!

Natalie – I cooked the pancakes on a non-stick griddle w/o any oil or spray, and they turned out perfectly! Just make sure you let them cook enough before you flip them the first time so you don’t end up with a messy pancake disaster! If you don’t want to risk it, you can spray your skillet/griddle with cooking spray or brush it with oil using a pastry brush to assure the whole pan is equally greased.
Blueberries would be a fabulous substitution for the chips, yum!! Good luck, and let me know how they turn out!!
