Remember I said I was going to try to get to the gym this morning? Well that never happened. I put my head on my pillow, and next thing you know, I fell asleep until around 12. Oops! Well, a girl needs her rest. ;) When I woke up, I was in the mood for another fruit smoothie, so I made one, but this time I added the remaining blueberries I had one hand. BEST. SMOOTHIE. EVER. Like seriously, I don’t understand why anyone would go to Jamba Juice when you can make a smoothie that’s even better right at home! I added 1 small champagne mango (I only have one left, I’m so upset!), some pineapple chunks, 1 kiwi, handful of remaining blueberries, frozen peaches, frozen strawberries, 1/2 of a frozen banana, and 1 tbsp of ground flax. I was planning on adding almond milk, but because there was enough fresh fruit, it blended up just fine w/o it! In usual style, I ate my smoothie with a spoon and savored it for as long as I could. Smoothies are my new obsession of the moment.
For lunch, I made a simple wrap with hickory smoked tofurkey, guacamole, grainy mustard, cucumber, soy feta, roasted red pepper, and some kidney beans that I had left over from my Cocoa Coconut Chili from the other day. Believe it or not, the wrap was delicious! I wasn’t too sure about the beans at first, but they definitely were a success. I didn’t have any spinach, broccoli slaw, carrot, or red pepper on hand which is what I generally love to stuff my wraps with, but this substitution worked well. I had my wrap with some pita chips, and saved my usual apple for later.
I’m on my way to Whole Foods right now to pick up some things (mainly produce). I’ll needing some carrots especially for my baking adventure tonight… Carrot Cake Cupcakes!! Every time Jenna mentioned them on her blog, I felt like making them, so now I’m finally going to get to it! I can’t wait for dessert (and dinner!!) tonight. See you then!

Haha, it definitely sounds like you needed the sleep – I slept in late today too, and I NEVER sleep in!! And it’s my birthday today, so I don’t want to sleep the day away, haha :0)

I loove Champagne Mangos! They have a different hue (flavor-wise…and color, I guess lol) than the regular ones but they’re So yummy :) That’s so funny because I totally SHOULD have slept in today but I did the opposite. Oh well! Enjoy your Sunday Er! (PS) Just came back from WF and mine now has an omelet bar! I didn’t have time to sample the fruit of it’s vines though. hm
And HAPPY BIRTHDAY LIZ!!

Yum, I love smoothies. I make my own using no ice or water and no added sweeteners, it’s tne only way! I’ve still never tried Jamba Juice since I came to the West Coast a few months ago. I start with a frozen banana and some peanut butter, anything can happen from there! The Perfect Smoothie is what I call it. Yours sounds delicious too, I need to get some kiwi!

Julz – An omelet bar?! Wow, I wish my whole foods was that decked out!! I’m so jealous, I’ve even heard of some whole foods that have a pizza bar with vegan pizza! Not fair!!

Oh my gosh you are going to LOVE the carrot cake cupcakes, I guarantee it!
I made them on friday night and they were amazing!!! My family loved them too, and they could not believe it when I told them they were vegan! Have fun licking the frosting spoon, it’s the best part =)

caroline – I used rudi’s 7 grain and flax tortillas. I also like ezekiel wraps. :)
kristin – They’re in the oven baking as we speak! You have no idea how excited i am!
nadia – Strangely enough, I bought my soy feta at Whole Foods. But out of all the WF’s in NYC (I’ve been to all of them!!), I’ve only seen it in one. So I’m assuming it’s a touch and go regarding if they’ll have it or not. :/
