Morning everybody!! Hope everyone had a good night’s sleep!

This morning, like I mentioned last night, I decided to make a new pancake recipe. Kath had made the Peanut Butter Boy’s pancakes yesterday and they looked so good, so I decided to give them a whirl! I made a few modifications; I used almond milk instead of eggs and subbed in soy yogurt (make sure it’s thick) for the cottage cheese. I also added some baking powder, a dash of cinnamon, and even added some peanut butter to the batter! I made the pancakes on my new griddle pan that I bought yesterday which made the process so much easier! But wait.. just as I put the pancakes on the griddle, I realized that I forgot to add the chocolate chips to the batter!! I was so disappointed, because there’s nothing like melty, oozy chocolate in pancakes. There was nothing I could do about it at this point, so I just resigned my mind that I’ll try them again with the chocolate chips another time. The recipe, which I halved, yielded 5 small/medium pancakes. One bite, and I knew these were really good pancakes. I must say though that I do like my own pancakes a little bit more, but I think it’s just because these were chip-less. All in all, a terrific recipe. I topped the pancakes with peanut butter maple syrup (1 tbsp peanut butter, 1 tsp maple syrup, pinch of water to thin it out a bit) which was so delicious. I could’ve eaten it by the spoonful! The only thing that I also found a bit disappointing was that the peanut butter flavor didn’t really come through in the actual pancake even though I added some to the batter. Oh well, I will definitely try these again with some more modifications. As per usual, I had my pancakes with some sliced strawberries.

I’m feeling extra tired this morning, so I think I’m going to relax in bed for a little while, and then in the afternoon, hit the gym for some strength training and possibly a light cardio routine. See you all for lunch!!
