Messy Mexican Goodness
I’m full of apologies lately, sorry for the delayed post! I decided to just get out of the house and take a ride to clear my head a bit.. I really needed it. I have a lot on my mind lately, and sometimes, I just need to try to get away from things, and be with myself.
For lunch today, I had a hummus and avocado sandwich on organic flax bread. Aside from the roasted garlic hummus and avocado, I added some sliced cucumbers, red bell pepper, and a drizzle of Annie’s roasted red pepper vinaigrette. The sandwich was super tasty.. you simply can’t go wrong with hummus. I also had a side of tortilla chips and some green grapes.
For some reason, I was hungrier than usual today, so I had my afternoon snack a little earlier than usual. I decided on a peach soy yogurt topped with some granola, and an apple (not pictured).
Dinner tonight was Cinco de Mayo inspired, of course! I decided on some blue corn tacos, which came out delicious! I made a black bean and corn mixture with the leftovers from yesterday’s taco salad. To the black beans and corn, I added some lime juice, cumin, cayenne, paprika and salt. Then, I sauteed some sliced onions and red bell pepper in a bit of rosemary infused olive oil for about 10 minutes until they got soft and caramelized. In order from bottom to top layer, my tacos had some of the hot black bean and corn mixture, the sauteed onions/pepper mixture, guacamole, salsa, and some of the leftover queso sauce that I heated up. These were the messiest tacos I’ve ever eaten, but they were well worth the mess consider how delicious they were! The queso sauce makes everything even more fabulous.. YUM! I had some fresh fruit on the side to accompany my tacos. My dinner definitely hit the spot.
For dessert, I had 4 squares of dark chocolate, which was extra amazing considering I haven’t had chocolate in quite some time.
Tomorrow is just another ordinary Tuesday; school, coming home, and attempting to think of something to do to occupy myself! Well, I’ll see you all in the morning. Hope everyone had an enjoyable Cinco de Mayo!

When I’m trying to “find something to occupy myself with” I always end up either baking or driving to the bookstore to browse/buy cookbooks. But thats just me being a crazy foodie =)
