I was on the road non-stop today! After dropping my mom off this morning and coming home to eat breakfast, I was so tired that I decided to take an hour nap.. I felt much better and refreshed afterward. Although I’m not really a fan of taking naps, sometimes they’re necessary! At around 12:15, I headed out to Whole Foods, and decided the smart thing to do would be to pick up lunch from the salad bar, and eat there so I could go straight to my mom’s conference center to pick her up afterward. I made a HUGE salad with mesclun greens, cucumber, red onion and a sundried tomato dressing (which was terrific!), and I topped it all with some of the cold grain salads from the salad bar. I also bought a small french roll and a small cup of vegetarian split pea soup to have with my salad. My eyes were definitely bigger than my stomach though because I left so much of the salad over! I ate all of the soup, the roll, and about 1/2 of the salad, leaving most of the quinoa salads behind. Everything was delicious; the soup was AMAZING, especially when I dipped the bread in it!
Regarding groceries, I bought: agave nectar, canola cooking spray, dried cherries, organic walnuts, freshly ground peanut butter, strawberries, bananas, scallions, peanut butter panda puff cereal, almond milk, a vegan chocolate chip scone and jumble cookie, and a container of house made carrot ginger soup.
Now that I’m finally home, I think I’m going to basically call it a day, and save my retail therapy for tomorrow. I’m just too exhausted to think about leaving the house again considering I’ve pretty much been out all day long. A girl needs her rest!
Waking up at 7:00 was killer this morning.. I’m certainly not used to getting up this early, so I’m pretty much exhausted right now! Maybe going to sleep at 2:00 wasn’t the greatest idea.. haha. I drove my mom to her conference center, and when I got home at around 9:15, I had one of the easiest breakfasts possible; a Vegan Banana Pecan Scone I had picked up from Whole Foods a few days ago with a homemade iced cappuccino, frapp style! The scone was absolutely delicious, and it paired with my coffee perfectly. Even though the chocolate chip scone will always be my top favorite, this one is very close!
Plans for today consist of a little bit of shopping (!!!), a stop at Barnes & Noble, another trip to Whole Foods to pick up a few things my mom needs (and I’ll probably pick up my lunch as well!), and a special dessert treat tonight!!!! I’m excited already!
