When I’m craving some fast and easy good ‘ol comfort food, I know to turn to Heidi Swanson for some help. I, once again, made her Lemon Scented Quinoa Salad recipe for dinner tonight, and it came out better than ever! This was the first time I ever actually used the optional cilantro, and it just made the dish come alive. Spectacular! I also cooked up fresh chickpeas (SO much better than canned), and used bulgar rather than the quinoa to change it up a bit, and it was just as good.. I’m in love with bulgar! The tahini dressing is also SO addicting.. and best of all is that it’s incredibly easy to whisk together.. I think I’m going to make enough of this stuff so I can use it on salads. Every component of this recipe is just pure heaven. Enough said.

My number one priority tonight is to get a sufficient amount of SLEEP! I’ve been going to bed extremely later, and for these past two days I’ve been getting around 4-5 hours of sleep which not only isn’t healthy, but doesn’t allow me to perform to my fullest during the day. I need a good 8-9 hours tonight.. hopefully I’ll get it! See you all tomorrow!
