Sorry I never posted last night! I had an awful headache, and all I wanted to do was rest in bed. I ended up just having a salad for dinner last night, because I just wasn’t in the mood to eat considering how I was feeling. I woke up today, and although it wasn’t gone completely, I can feel it tapering off now which is good. Maybe I just needed a healthy, hearty breakfast.
I didn’t really want to start making an elaborate meal this morning, so I just toasted up two hempplus waffles and spread them with some almond butter, a drizzle of maple syrup, and a dollop of soy whip. I’m all out of bananas, which is tragic, so I topped them with some blueberries instead. They were delicious, and after I ate, I immediately started to feel the headache slowly dissipate.
As for today, I plan on hitting the gym for some cardio and upper body exercises.. maybe it’ll make my head feel a bit better. Otherwise, I’m just going to take it easy and rest.. I surely need it. The only thing I might do later on tonight is go into the city for a quick bite for dinner. I’ll play it by ear I suppose.

That dollop of soy whip looks irridescent (sp?!). Beautiful and fresh! I saw at my healthfood store (imagine!) there’s a thing called BATTER BLASTER! And yes, it’s organic, but it’s pancake/waffle batter in a cool-whip spray container! Hmm… it makes like 28 4-inch pancakes, it said. Not sure what it’d be like, but it’s all organic and not bad ingredients. I bet yours taste better, though :)
MY V’CON CAME!!!!!!!!!!! I tried out the pineapple-quinoa-cashew stir-fry, but I didn’t actually have pineapple (ha!) so I subbed some lemon+lime juices. Not bad, but I’m going to try some others tonight.

batter blaster? hmmm… sounds interesting, I just looked it up and it has eggs in it though :(

If you’re looking for a quick, casual bite, you should check out Abbondanza’s on Bleecker St. It’s a cute little Italian joint that does salads, sandwiches, personal pizzas, but the food quality is top-notch (with a huge selection of fresh breads, spreads and veggie toppings.) When it’s warm out, I love picking up a sandwich from there and taking it to Washington Square Park to eat (but you will take over half of it home with you, b/c the sandwich and salad sizes are ridiculous.)
