As for my dinner tonight, I made the very simple, yet satisfying meal that I was craving! I decided on some BBQ Tofu using two slabs of leftover tofu I had in my fridge. I basically made a fast and easy hot bbq sauce (your favorite bbq sauce + hot sauce + ginger tamari + water to thin it out) and set that aside. I then proceeded to bake the tofu for about 15 minutes, and then sauteed it in a bit of oil. Once it was nice and crispy, I threw the bbq sauce into the skillet, and let it thicken and bubble until it was basically all absorbed, and it coated the tofu. How easy is that? I also made roasted asparagus (tossed with olive oil, S+P, rosemary, and thyme, and roasted for 10 minutes at 400) and had some simple brown rice. This meal was so delicious and satisfying, and incorporated all of the components of a well rounded meal, complete with carbs, protein, healthy fats, and veggies.
For dessert tonight, I decided to have a HUGE (picture doesn’t do it justice!) fruit salad! I cut up some perfectly sweet and ripe pineapple, watermelon, strawberries, and blueberries, and had a healthy, yet one of the most delicious and sweet treats! I must say that I felt stuffed after it though considering the water content!
My night is going to be fabulous because the new episode of Weeds is on.. party time! If I can stomach it, I might make some popcorn to celebrate.. haha!! Hope you all had a great day, see you in the morning!

mmm I was planning on making BBQ tofu tomorrow for lunch…I just made the Apricot BBQ sauce from V’Con and it is soo delicious! The way you cook it sounds so much easier and tastier, I might just do it that way.

That’s a great idea for preparing tofu. I eat tons of the stuff but have relatively few methods to cook it ( 1- marinade and bake 2-sautee). I’ll try yours next!

Meh, it looks all right, I GUESS… haha no totaly kidding! And I’m totally JEALOUS, as all that I’ve wanted/searched for these past few days are big, fat, asparagus and all that i’ve been able to find are the stupid, puny, skinny ones! haha… I wanted to have roasted leeks + asparagus 2n so badly :( Oh well… Tomorrow I’m hunting those babies down! :) Enjoy WEEDS!

Erica, I think you eat just the right amount — tons of veggies, fruit, proteins, and carbohydrates at every meal! :) I had a dessert just like yours tonight, 1/3 of a giant watermelon. It was sooo good!

All people are different and have different metabolisms, therefore they need different amounts of calories. As long as your body is working properly (you’re getting your periods, etc.) and you feel healthy and are at a healthy weight, then you can know that you’re getting enough calories for your body ;).
I know that personally, I eat way more than my sister, but we’re both at healthy weights, so we just have different needs.

i started eating healthier i have gained like 12 lbs and still without my periods that means i need to eat more? or gain more weight? :|

Yes! Both!!! It’s very very dangerous to not get your period. It means something is wrong in your body (especially if you are underweight; it means you REALLY need to gain weight and eat more!). Especially if you’re young, not getting a period can be so dangerous for your bone health and fertility later on.

It’s been 3 years since my last period i think i will not have kids :( that’s sad
I went to the doctor and the pills didn’t work i just gained weight
I don’t think i’m underweight now i’m 5′3” and 95 lbs i was 82 lbs that was bad.

That’s still very much underweight. You should weigh AT THE LEAST around 105. And please find another doctor who is more knowledgeable in the area– the birth control pill is NOT NOT NOT a healthy way to regain your periods. All it does is give you a placebo (fake) period that does nothing to protect your bones or address the reason you lost your periods in the first place.
