Lunch this afternoon was terrific! I went with an old classic; maple peanut butter, raspberry preserves, a small banana, and a drizzle of maple syrup on sprouted wheat. I also had some sliced strawberries along with the sandwich. You just can’t go wrong with a simple, classic grilled pb&j sandwich! It’s comforting, satisfying, and cures my sweet tooth at the same time! I also grabbed a small handful of yummy roaches dates(!!) to snack on. I had about five or so.
Anyway, I have some good news, and some not-so-great news.. but lets start with the good! This morning, I got a callback from Crumbs, the bakery I applied to! I scheduled an interview for Monday morning, where I’ll be meeting with the lovely woman who called me on the west side of the city. Although I already expressed my interest in eventually working at Candle, for now it would be a great experience for me to see what goes on behind-the-scenes of a bakery, especially considering I plan on going to culinary school in the future in hopes of opening my own cafe/bakery one day. I don’t want to necessarily commit myself to this job right away though, because I want to give myself some time to adjust and settle in to the college life, but I’ll certainly give it a try, and see how I’ll be able to juggle things. Once October (my birthday month) rolls around, I’ll hopefully have gotten myself more accustomed to this new life, and will then consider applying for Candle and dropping the bakery job. One step at a time!
Onto the not-so-great news, my grandpa is feeling worse and worse as each day passes; this morning, he went for his MRI, and was in more pain than ever, and no medication seems to be helping alleviate it thus far. I really hope we’ll be able to find out the root behind this sudden condition of his, because I hate to see him suffering so much. Understandably, he’s been feeling pretty down lately, because he can’t do the things he normally does; he’s the type of guy that likes to keep himself and his mind busy and occupied, and he simply cannot do so if he can barely even move. Please continue to pray for him and keep him in your thoughts.. it means the world to me!
With all of this going on, I’m in no mood to cook dinner tonight (surprise, surprise!). I’ll probably go out with my friend Arlene for some pizza in the city, and might possibly pick up some gelato from the famous il Laboratorio del Gelato that I’ve been dying to try! And here’s a question for you all – considering my recent desire to not want to cook elaborate dinners at home, what do you all enjoy eating for dinner when you’re either strapped for time, or just too darn lazy to bring out the pots and pans?

haha I think dates look like roaches too! my little brothers always giveme this look when I eat them…
I didn’t know you wanted to open a bakery! That is so cool and I would definetely come check it out =) I think you would be VERY sucessful in the food buisness considering how amazing all of your food looks here.
I’m so sorry about your grandfather, I hope he gets better soon and I will keep him in my thoughts!
And to answer your question, I like to have a bowl of cereal or a small stir-fry or salad for a lazy dinner, I usually have veggies cut up and I can just throw it together fast.

If you like il Laboratorio del Gelato, you’ll LOVE Grom! There’s one in the Village on Bleecker (http://www.grom.it/; warning: site’s in Italian). Their coffee flavor is to die for! (Esp. for coffee girls like moi…) ;)
For my quick dinner, I usually nuke a sweet potato in the microwave (3 min. each side), and add some steamed veggies. Simple yet delicious!

Erin – I’ve heard of Grom, my friend actually lives a couple of blocks away from it! Which do you suggest I try first? And I’m a coffee girl myself, so I bet I’d die over the coffee flavor!

Hmm…that’s a tough call, because “il Lab” has quite a cult following–you can usually find the owner himself behind the counter, scooping away!
You could always flip a coin, or do what I always do when faced with such a dilemma: go to one and then the other! :D

when im too lazy to acutally cook i might take some alfresco brand chicken sausage, make a fruit salad, or regular salad, top it with the microwaved sausage, and dressing/hemp seeds and flax meal.
ill usually have some form of whole grain bread or starch with it.
it takes all of 5 minutes to make.

of course theres always the favorite sunhine burger, or “bagel pizzas”
which is simply a sourdough bagel ( i eat french meadow) with tomato sauce, and cheese, etc…..
i usually prefer to be creative and cook my meals, but tonight my mom is cooking roast beef, potatoes, califlower, carrots, and marinated white beans.
Im not a fan of beef though

When I’m extremely lazy I’ll eat a can of lentils with a bit of curry sprinkled on top. But if I’m feeling a bit less lazy (but still totally lazy) it’s an assorted sandwich, nachos/cheeze/salsa, or grilled cheeze + ketchup.

Your grandfather is definitely still in my thoughts. I hope he gets better soon…I know how hard it is to see someone in your family go through pain.
When in a hurry for dinner, such as last night with late class, I grab leftovers I made earlier in the week. That is why I make more than one portion usually. Last night I had some leftover bbq tempeh, boiled some corn-so easy, and made some kale chips. It doesnt sound that exciting but it was super filling. I also make veggie burgers a lot and huge salads that don’t require cooking, just chopping.

Congrats on the interview though, that’s awesome! I work in a bakery and it’s a whole lot of fun. I love that you’re future ambition involves opening your own because that seems so fitting for you based on the amazing sweet dishes you seem to come up with on a regular basis, most especially those awesome breakfasts!
As for quick meals, I usually end up throwing together either some kind of salad, a veggie burger, a sandwich, or whatever leftovers happen to be sitting in the fridge, nothing too fancy. Actually, most of my dinners seem to be like this regardless of if I’m in a rush or not. I must just be a lazy dinner maker haha.

i’m hoping that your grandpa is alright, girl! no one can ever tell what’s wrong with older people–it’s always a guessing game, so i can understand how worried you must be and i feel for you :-( you’ve been a great grand daughter over the past few days, though!! smile about that!
also, il lab is good, but Grom or l’arte del gelato are SOOOO much better. highly recommended!! :-)

aw, I’m sorry to hear about your grandpa’s pain!!! I’ll be thinking about him and your family to heal and feel great again :) For quick meals, I’m a rice + beans gal! Although I make great stir-fries that every frozen and fresh veggie I have + tempeh (my love) or tofu + rice go into! Wraps and sammiches are nice, too. Yogurt + nuts + fruit… depends what I’m in the mood for, I guess!
