Thanks for all of the great suggestions for quick and easy dinners! I’ll certainly keep all of them in mind when I’m feeling particularly uninspired, or just plain lazy! And I also appreciate all of your thoughts and prayers for my grandfather. It really means a lot.
Anyway, tonight was pizza night just as I had planned! My friend Arlene and I headed into the east village for some huge, yummy Viva Herbal slices, and neither of us were disappointed!
I was having a very hard time choosing which slice to go with, but I eventually ended up getting the Vegan Picante which had vegan soy meatball, onions, roasted red peppers, and tomato sauce on a whole wheat crust. Oh. My. GOD. In all honesty, this was the most incredible slice of pizza I’ve ever put in my mouth! I can’t even begin to describe how fabulous it was. The sauce has always my favorite part of the pizza, and this slice was loaded up with the greatest I’ve ever had. And I can’t forget to mention how delicious the peppers and onions were.. caramelized to perfection! I’d order this slice again in a heartbeat, without a doubt! My only complaint was that it was extremely greasy, but I did my best to dab it off with a napkin!
Arlene went with the slice that Viva is known for; their famous Zen slice which is loaded with green tea herbed miso tofu, basil pesto, mushrooms, caramelized onions, sundried tomato, and roasted garlic on a green tea herbed spelt crust. She really loved it, and said it definitely lived up to all the “hype!”
After our pizza dinner, we were definitely in the mood for something sweet. We had originally planned on getting some gelato, but at the last minute, we changed our minds and headed to Candle for dessert! We both ordered a soy cappuccino (one of the best I’ve had!) and the special dessert for the night, a Cherry Bundt Cake! It was absolutely scrumptious, of course; super moist and crumbly, and chock full of the freshest and sweetest cherries possible. It was the best of both worlds tonight; a cheaper dinner made room for a splurge on dessert. The perfect way to end a fun filled night! I’ve now tried every single dessert on Candle’s menu!
Tomorrow morning, I’ll be getting an early start because my mom has a doctor’s appointment in the morning, and I’ll be joining her to keep her company. I don’t have much planned during the day, but I’ll be going to a block party tomorrow night; not sure if that’ll impinge on a dinner post or not, but if it does, I’ll make sure to post as early as I can on Sunday morning! I’m off to bed.. night guys!!

Gorgeous meal! I definitely have to check out Viva Herbal when I get back to the city next month! I love pizza without cheese…it’s my favorite, which may sound strange, because I like cheese, but I’m all about the crust. That crust looks diviiiine.
Oh! and when strapped for time, my go-to dinners are either a) oatmeal with pumpkin, coconut and crunchy peanut butter, b) health valley’s vegetarian chili with 1/2 an avocado, diced onions, fage and cilantro for a fresh kick, or c) a microwaved sweet potato with some sort of fun, substantial topping.
honestly though, it takes 2 seconds to boil pasta, so my go-to quickie is whole wheat pasta with pecorino romano cheese, olive oil, black pepper and arugula. SO easy and good.

wow, those pizza slices look great! you inspired me for my veggie dinner tonight! and that dessert from candle looks scrumptious!
Oh, and if I might add to your growing list of fast/quick meals, i like to have veggie chili on hand by health valley to put on top of brown rice, gyoza from trader joes w/ added veggies, salads, veggie burgers, premade and frozen burritos…and that’s just a few! otherwise i always feel like breakfast foods are quicker to make…so they can be had for dinner too!
have fun at that block party tomorrow! we used to have them at home, and they rock!!!! people go crazy funny; at least in my neighborhood! :D
