I put good use to a bunch of leftovers tonight! For dinner I decided to make something that I haven’t made in a while- a delicious tofu scramble! I’ll post the exact recipe I came up with sometime tonight, but the scramble was comprised of about 5 oz of firm tofu, a handful of bell pepper strips, diced onion, garlic, diced tomato, about 3 oz of baby spinach, lots of hot sauce, and plenty of spices! It was absolutely exquisite, especially dunked in ketchup! I also had a bunch of alexia brand sweet potato fries that I baked in the oven.. they were amazing. Packed with protein and nutrients, this meal was definitely a winner! It would make a great breakfast or brunch as well!
As for the remainder of the night, I’ll be watching the season premiere of the new seasons of both Dexter and Californication starting at nine. Although I like both of these shows, nothing compares to Weeds.. I’m going through major withdrawals here!! Alright guys, I’m off.. see you all tomorrow!! Have a great night!

I LOVE tofu scrambles! They are one of my favorite breakfasts ever. And the sweet potato fries sound amazing, I have yet to try that brand!

Hey Erica,
That tofu scramble looks delicious! You always present your meals so beautifully. I am watching Californication right now. Dexter season 3 was great, although after watching the first five episodes of season 1 weeds that I ordered ALL TODAY, I can definately see why you love Weeds the best. Deborah is probably my favorite character, but Rita is getting really needy and annoying (just a bit).

Camille – Weeds is my favorite, no doubt about it.. Mary-Louise Parker is just phenomenal (and totally deserved that emmy!!) But I do enjoy the other two shows as well.. I agree about Rita being a little annoying at times, it’s not only you!
