So I definitely didn’t get the amount of sleep that I intended on last night; I ended up watching Across the Universe, and by the time it ended, it was 3AM! By the time I fell asleep, it was already close to 3:45, and the worst part was that I had to wake up at 7 this morning to shower and do my hair. Let’s just say that I wasn’t feeling so hot today. It was one of those walking around, much like an empty zombie shell kind of days. And to make matters worse, it was freezing outside today. Freezing as in 30 degrees. My body is not accustom to the cold yet, and I’m dreading it. Wow.. I’m ready for the weekend already!!
After I showered and got a few things done around the house, I made myself a warm and comforting breakfast- a toasted ezekiel english muffin spread with lots of peanut butter and raspberry preserves alongside a super unripe green banana. Believe it or not, I absolutely LOVE unripe bananas. The greener the better, I say! This one was so unripe that I had to cut the peal off with a knife. Love it. This breakfast was gone way too fast, but nevertheless, it still managed to fill me up all morning long. Oh, the powers of peanut butter!
School today went extremely quick, thankfully. Aside from a psychology survey thingy that I had to take, I only had my writing class to go to. Before I knew it, I was back on the train heading home. I better relish this time being that I have so few classes, because I know that my work load will be a lot more strenuous in the future semesters to come. Ugh.. so not looking forward to that.
When I got home, I fixed myself up a delicious lunch- I used the last of my tempeh bacon to make another BHLT sandwich (h= hummus). It pretty much goes without say, but on two slices of protein bread, I layered on the tempeh bacon, crispy romaine lettuce, fresh sliced tomato, and two giant spoonfuls of yummy garlic hummus. This was such a superb sandwich.. tempeh bacon and hummus were made for each other. On the side, I had another crispy granny smith apple. During the fall months, I can’t get enough of apples and pears.
Now technically, I knew that I was overdue for a friendly visit to the gym, but between my extreme zombieness (making up words is my specialty) and the brutally cold weather, I knew that there was no way I’d get my ass of the couch. What to do when you skip a workout? EAT, OBVIOUSLY! I snacked on a pecan pie Larabar while resting in bed. I’m larabar obsessed. It’s official.
I was in no mood to prepare any sort of labor intensive dinner, so I decided that leftovers of my stuffed acorn squash would be perfect! All I had to do was bake off the squash, and heat up the wild rice pilaf. I had my squash on a bed of steamed swiss chard. This was exactly what I was craving, and best of all was that it involved minimal preparation on my end. How perfect!
For dessert, I had this huge vegan chocolate chip cookie that I bought in the city today. Even though I made my own yesterday, I just couldn’t resist this guy when I spotted it in the coffee shop. The cookie was the size of my head, but I still happily ate the entire thing alongside a glass of soymilk to wash it down.
As if I haven’t said it enough, I’m absolutely drained right now. I’m heading back to my bed with a cup of hot chocolate, and I’m staying put for the remainder of the night. I’ve got to make sure I’m a little more lively for HALLOWEEN tomorrow!! If I keep this no-sleeping thing up, I’ll look so much like a zombie that I wont even need a mask! I surely don’t want that to happen!

ETA on 10/31: HAPPY HALLOWEEN GUYS!!!! I wont have the opportunity to post tonight, but I’ll be back tomorrow.. enjoy the night, and eat lots of candy!
Hi All!
Unfortunately, I slept awful last night. I kept tossing and turning, waking up randomly, and to top it all off, I woke up with back pains. I think it’s time I invest in a new mattress.. I’ve woken up with back aches one too many times! To make things even worse, my tummy was bothering me as well. What a morning!
I figured a comforting breakfast would do me well. I made a pumpkin wheatberry dish, in the same fashion that I make my pumpkin oats, only with wheatberries, obviously. I heated up 1.25 cups of wheatberries with 1/2 cup almond milk, 1 cup of pumpkin, lots of maple syrup, cinnamon, and a handful of raisins, and topped it off with a sliced banana. It was super sweet and delicious, and extremely easy to fix up considering I cooked off the wheatberries last night. Prepping ahead works wonders when wanting to prepare speedy meals! I promise it tasted way better than it looks!
Shortly after breakfast, I got an unexpected visit from a close friend of mine! He texted me to let me know he was outside, and my face literally glowed. He stayed at my house for about 2 hours before having to head home. To me, there’s nothing like getting a surprise visit. Especially from someone special.
Before I knew it, it was time for lunch! I made a delicious sandwich today- on 365 twelve grain bread (this bread is so soft, and it smells all buttery.. mmm!), I added 1/4 cup garlic hummus, chopped romaine lettuce, a handful of sundried tomatoes, and three slices of tempeh bacon. My oh my, was this tasty! I also had a big and crispy golden supreme apple on the side. Perfect midday meal.
This afternoon, I decided to head out to my favorite store, anthropologie (obv!), to buy some clothes! I tried on a bunch of things, but only ended up leaving with one sweater. I was expecting to fall in love with a bunch of things, so I left slightly dissatisfied.. but at least I didn’t leave totally empty handed! On my way home, I ended up getting caught in an abundance of traffic. Blah. I was so impatient, so every time I hit a snag, I would turn off and head in another direction in hopes of avoiding it, but every way I turned, I would get into more traffic! There was no escape! Luckily, I brought a cherry pie Larabar with me to nibble on to keep me occupied. It’s times like these when I wish I could fly!
By the time I got home, it was nearing my time to eat, so I started on dinner. I was really in the mood for a comforting meal, so I turned to Veganomicon’s phenomenal chickpea cutlets! I’ve made these several times in the past and they’ve never failed me. While they baked, I prepared the rest of my meal. I kept things simple, and cooked up 1/3 cup dry bulgur, and lots of delicious kale. I topped the cutlets with a simple agave-dijon sauce, and dinner was served! Not only are these cutlets hearty, full-bodied, and delicious, but they’re also so incredibly filling! I only was able to eat one, so I gave the other to mom (who loved them, also). Now this is what I call a power meal!
But it doesn’t end there! My homemade muffins were all gone, and I needed a sweet homemade dessert to cap off the night. What’s a girl to do? Bake some cookies, of course! To go along with my whole comfort food theme tonight, I made some good old classic homestyle chocolate chip cookies, vegan style, naturally! I’ve made these cookies before and they were a big hit, so I knew this recipe wouldn’t fail me. I followed it exactly (except that I used dark chocolate chunks instead of chips), and it yielded 5 huge cookies! I’d much rather a large cookie than a couple of small ones. Of course, I had one fresh out of the oven. One bite, and I was in pure chocolate chip heaven. I also had a tall glass of vanilla soy milk, of course. Milk and cookies never go out of style!

I’m really looking forward to getting a good night’s sleep tonight.. I surely need it after last night! I’m getting sleep already, and it’s only 9:00! I swear, sometimes I think I’m really a 70 year old trapped in the body of a 19 year old!
