The Votes Are In

Good evening guys!!

I managed to have quite a busy morning despite not leaving my house! Aside from voting (of course), I prepped dinner for tonight (I get home at around 6, at which starting dinner from scratch isn’t too appealing), baked some cookies(!!!), did a TON of dishes, read a super long 11 page article for class, and printed out my mile long psych notes. At least my morning was productive!

Before I left the house, I made myself another quick BHLT sandwich on protein bread. On the sandwich was- three slices of tempeh bacon, 2 big scoops of garlic hummus, chopped romaine lettuce, and a big tomato slice. It was SOOOO good. I rounded things out with an ever-so-crispy granny smith apple. They are my absolute favorites without a doubt! I also couldn’t help but have a big ‘ol scoop of peanut butter straight out of the jar for “dessert!” ;)

School went by extremely quickly today- I’m especially thrilled because I have both tomorrow AND thursday off.. a mini weekend within the week! I couldn’t wait to get back home and be able to just relax without worrying about having any work to do for tomorrow. While sweating through my psych class (it literally felt like a sauna in there- it must have been around 80 degrees!), I snacked on a pistachio Larabar. It was my first time trying it, and although good, it didn’t quite live up to some of my other favorite flavors. It was still good though!

It felt so strange to walk out of class at 5:00, and it being pitch black outside! I absolutely hate the whole concept of daylight savings.. why do we need more light in the morning? Makes no sense to me in the slightest. Thankfully, the lights on the city buildings were shining which make the darkness slightly more tolerable. I’m missing the warm, bright, vibrant summer already!

Once I got home, I was STARVING and couldn’t wait to eat dinner! Thank goodness I had most of my meal ready in advance. On tonight’s menu was cornmeal crusted tempeh with a sweet potato mash, steamed kale, and a reheated portion of “cheater” baked beans. I had prepared the sweet potato mash earlier this morning, so basically all I had to do tonight was fry my tempeh! This meal, as a whole, was so satisfying and tasty! The tempeh was probably the best I’ve made in a while.. it was nice and soft inside with a perfectly crusty exterior and tons of flavor. Loved it.

My dessert should be pretty obvious- I had two my homemade chocolate chocolate oatmeal pecan cookies that I made this morning! I used this recipe as my base, but used rolled oats instead of quick, and added cocoa powder to the mix. Once I formed the batter into rounds and popped them in the oven, I realized that I had forgotten to add the oil! To my surprise, the cookies didn’t even need it! They were perfectly sweet, moist, chewy, and rich without the oil.. I think the peanut butter in the batter is what salvaged them. Despite the lack of oil, these tasted superb! I had two of them with a glass of hempmilk. Yum!

I actually just finished watching Across the Universe (probably my what.. 10th time?!) which is why I’m posting so late! I’m absolutely exhausted tonight, so I’m going to get to bed as early as possible. As for now, I’m heading to watch the updates on the election of course! It seems as though the votes are in!

    Hahaha I LOOOOVE Across the Universe and for awhile I watched it almost every day LOLOL :] It’s SOOOO good and I always sing along with it too :] You should def. dl the soundtrack if you haven’t already!!! And now cuz of you and all your pb talk, I’m off to eat a scoop of Bee’s Knees :]

    By the way, I loooooove the pistachio Larabar flavor (surprised?? haha), so if you have any extras, we could do a Larabar-flavor bar exchange, since I have TONS of the other flavors stocked at home :-)

    Have you tried the Key Lime Pie Larabar? I just “discovered” it and it is my absolute favorite!

    Liz – I’d love to do a larabar trade off, but unfortunately I only bought one pistachio!! I’ll keep it in mind though for next time!

    Megan – No, I haven’t actually! The only larabars I’ve yet to try are the key lime pie and lemon.. I’ll pick them both up next time I’m at Whole Foods!
