Hey everyone!
I held back who I voted for yesterday, but considering the election is over, I’ll let you know that I was supporting Obama, and I’m thrilled that he won. I’m looking to forward to seeing the great things that this passionate and powerful man will do for our country. Both candidates, in my opinion, gave wonderful speeches last night, and I appreciated the fact that they both seemed supportive of one another. I’m not into politics much (food is my forte!), but I must say that I’ve enjoyed the ride, and I’m supporting Obama all the way.
Getting back to my day, I’ve had a pretty hectic one even though I had the day off! I had an orthodontist appointment scheduled for 10 am, and of all days to oversleep, my body decided to wake me up at 9:15 this morning! I literally had no time to get anything done, let alone make the breakfast I intended on fixing up. I had to settle for a fast bowl of pumpkin oats with two bananas, 1/2 cup almond milk, maple syrup, lots of cinnamon, raisins, and a handful of almond slivers to top it off. Tomorrow, I’ll use the rest of the pumpkin for the breakfast I really wanted to have today! Needless to say, my morning meal was still delicious, despite having to scarf it down in a matter of minutes!
I ended up getting to the office just in time, five minutes early to be exact! Considering that I was only going to be picking up my two new retainers today, I expected this visit to be an in-and-out deal; little did I know I’d have to wait for more than an hour!! Eventually, I was getting so impatient that I went up to the front desk to ask when they’d be taking me in, and to my dismay, I found out that they didn’t even know I had arrived. Figures! People are so incompetent these days. Once they realized that I was there, I was out the door in about 5 minutes. What a waste of my precious time! Haha.
After my appointment, I went to a couple of stores to buy some things I’ve needed for quite some time- an immersion blender, another set of teaspoons (they always seem to disappear on me), and a new can opener. I was going to also go to barnes & noble, but it was getting closer towards lunch time, and I was pretty hungry. I decided to just head on home, and go to BN later on.
Lunch was my usual- PB, raspberry preserves on health bread. I also had some strawberries and baby carrots, not pictured.
The weather was quite dreary and miserable, with on and off rain and such, but I still really wanted to pay barnes & noble another visit. I also wanted to go to foot locker to buy a new pair of converse sneakers, so I forced myself out again. Usually once I get back home, I never want to leave! Anyway, when I got to BN, I didn’t expect to buy more than one cookbook, if that. What do I come out with? Another FOUR(!!!) new cookbooks- the voluptuous vegan, the real food daily cookbook, the vegan gourmet, and you wont believe it’s vegan!! I’ve spent so much money on cookbooks lately, but to me, they’re never a waste of money. You can never have too many cookbooks in my eyes! I also bought my pair of converses which made me very happy. :)
Once I got home, I plopped myself on the couch, and stayed there for a good two hours while reading reading my cookbooks from cover to cover. While doing so, I had a cocoa mole Larabar which was SOOO good. I haven’t had one of these in a while, so it was a nice change!
Being that my new goal is to make a different cookbook recipe every night, I hopped to it, and made two absolutely outstanding recipes straight out of the vegan bible that is veganomicon for dinner tonight- the penne vodka and herb scalloped potatoes with a big side of broccolini (aka my new vegetable obsession), and a piece of crusty whole wheat artisan bread with earth balance and thyme. Seriously guys- this was probably the best meal I’ve EVER made. I could barely even believe my tastebuds- it was THAT amazing! I can’t even comprehend in words how freaking fabulous the herb scalloped potatoes were- they were reminiscent of homemade potato crisps, kicked up about 50 notches, naturally! And the penne vodka? Absolutely superb. The sauce was a breeze to throw together, and the result did not disappoint! I could eat this meal every day for the rest of my life, and be perfectly content.
If you have veganomicon, you MUST try these recipes! And if you don’t have it, GO OUT AND BUY YOURSELF A COPY, PRONTO!! Speaking of cookbooks, here’s my ever-growing vegan/vegetarian collection! One of my greatest loves!
I could barely even stomach the though of dessert after this monstrous meal (that probably could’ve served two)- scratch that, of course I could! As full as I was, I needed something sweet to end my night- and what better way to take care of a sweet tooth that than by eating a homemade double chocolate oatmeal pecan cookie? I had my cookie with a tiny glass of soymilk (maybe around 3-4 oz worth). I was so satisfied after this restaurant-worthy meal!
I’m SO glad to have the day off tomorrow, mainly because it’s going to be a complete washout in the city. One thing I dread is having to drag myself to school in the rain. The only thing I’d like to do tomorrow is get in a workout considering I’ve been slacking on exercise big time lately. Although a run outside seems out of the question as of now, even a quick gym visit will do.
Off to work on my research paper and psychology notes read more cookbooks! Haha, goodnight guys!!

I’m totally getting veganomicon this wkend!!! I didn’t even KNOW there was a Candle Cafe cookbook until thanks to youuu!!! You should get V Cuisine, The art of New Vegan Cooking & La Dolce Vegan!!!! I love them!!!
& I absolutely LOOOOVE broccolini!!! What a simple delicious veggie!! I love steaming a ton and just munching on them thru-out the nite hehehe…

I haven’t had real good pasta in a while.. sounds like I’ll be lookin’ over me copy of Veganomicon soon!
I also really enjoyed that laraar flavor in the past… it’s a very unique flavor.

you also have a great cookbook collection! i was at barnes and noble yesterday (i practically live there, my favorite pass by) but i did not see the real food daily – do you like it so far? i’ve eaten at the restaurant in west hollywood, so i would love to try their cookbook.

delicious dinner!!!!!! And I want those cookbooks…it happens to me that every time I see a healthy cookbook, I just want to buy it, but never had time to make all those fabulous recipes. Your plan of making one new recipe every night is great!!! But I’m wondering how will you cook for one meal? or you have leftovers as well?

I have tons of cookbooks too but I often find it overwhelming! I have no idea what to try first. I usually make a list for the month of everything I want to try so I can shop and plan for those meals.
Wow, those potatoes have got me drooling and so does that oatmeal!
I want that candle cookbook!!!

Yes we can, indeed. I watched the election from the american embassy in berlin (where i’m studying abroad for a semester) and it was absolutely thrilling to see the global community around me so excited for our country. I’m glad you did eventually gracefully share your views, it’s always nice to hear about who you are outside of delicious food (haha in a so not creepy way). thanks for keeping the blog so up to date, by the way!
