Hi guys!

I never got the opportunity to post last night because I ended up staying at my friends house watching dexter reruns until 12AM! By the time I got home, the only thing on my mind was getting into bed to get some sleep- although I’m basically feeling 100% again, I still don’t want to push myself too much so I start feeling worse again. Anyway, here’s a brief rundown of yesterday’s eats!

Yesterday I started my morning with my favorite breakfast treat- a vegan chocolate chip scone from whole foods. You all know how much I love these things- I never tire of them! I had my scone with my usual cup of coffee that I burnt my tongue with. Ouch! It was still delicious though, burnt tongue and all.

I turned to the lovely amy for some help come lunchtime- I heated up an Amy’s Especial Burrito and also had a granny smith apple to round out the meal for a quick and speedy lunch. I love how convenient these burritos are! This lunch was light, but yet very satisfying. Love it. I’ll have to stock up one these guys!

Mid-day, I turned to a trusty favorite of mine- a pecan pie Larabar. I haven’t been eating as many of them lately, and I realized today how much I’ve missed ‘em! For something extra decadent, I spread a spoonful of my amazinggg butter toffee peanut butter on it. It really took it to the next level!

My friend and I went to eat at a local thai joint for dinner last night- I stuck with a classic favorite, and ordered the Vegetable Pad Thai. It was absolutely fantastic! Easily one of the best pad thai’s I’ve ever had. My only gripe would be that there weren’t any ground peanuts on top, but otherwise, it was pretty much perfect. I ate about 3/4 and took the rest home. They give enough food to easily feed two people! Good thing I have a big appetite!

Not too long after, I headed to another friend’s house where we hung out in the basement and, like I mentioned before, watched dexter reruns together- he just recently got into the show, so he never saw the first or second seasons (which, in my opinion, were the strongest seasons). It was a lot of fun watching old episodes again- I forgot how great it is! On my way home, I couldn’t help but get one of these babies- I got a medium cup with all four flavors: bananas foster, chocolate mousse, cookie smash, and peanut butter with chocolate sprinkles. This was the best idea yet! I loved having a different flavor in every bite. I’m going to be getting multiple flavors more often now!

Alright guys, I’m off to eat some breakfast, and then get pumped for tonight- I LOVEEEE New Years Eve! Unfortunately I wont be going to see the ball drop, but I’m sure I’ll have a lot of fun anyway; first, I’m going to be meeting a blog reader, Lida, for dinner at Candle, and then I’ll be going to my friend’s house party that I was invited to. I’ll check in with you all tomorrow morning!

And before I leave you, I’d like to ask what are your goals for the new year? I’ve never really believed in all of the resolution nonsense, but there’s no harm in setting some positive goals in hopes of getting the new year off to a smooth start! Here are mine-

- Start getting back into more of a routine regarding exercise.
- Be more patient and understanding towards others.
- FIND A JOB!
- Get in the kitchen and start cooking again!
- Really investigate culinary schools in and around New York.
- Make school more of a priority.
- Continue with the blog, and make it better and more interesting for you all!

Have a fabulous New Year’s Eve everyone!

I’m so glad to be back! I’ve had a pretty sucky weekend to say the least- I was planning on going out both Friday and Saturday night, and today I was hoping to be able to go into the city for some ice skating with friends, but all of those plans went down the tubes because of my condition. That’s the one thing I hate the most about being sick; it’s so debilitating, and it gets extremely tiring being stuck at home with nothing to do for so many days. But gladly, I’m feeling slightly improved today and I was able to go back to eating normally again- YAY! I’m still not completely recovered, but at least the appetite is back!

For breakfast this morning, I had a delicious and doughy whole grain bagel from my favorite bagel shop near my house. I toasted it up and spread it with plenty of peanut butter and served it alongside my usual banana and a cup of coffee, of course. I couldn’t have asked for a better way to start my day!

All I did this morning was chill out and rest in the house. Surprise, surprise. I also drank my body weight in orange and cranberry juice for the sake of my throat. This, however, brightened up my day- I was greeted by a package on my doorstep from Naturally Nutty! Apparently my cousin ordered me the three flavors I had wanted most- butter toffee peanut butter, honey roasted cinnamon peanut butter, and vanilla almond butter! We were chatting on the phone the other day, and NN just happened to come up in our conversion (he’s a PB lover like myself) so he took it upon himself to buy them for me for Christmas! How sweet! I couldn’t wait to get my hands (or spoon, I should say!) into this stuff. I refrained from opening all three jars (I was tempted!) because I didn’t want to risk any of them going bad. After much debate, I decided to give the butter toffee a try. The verdict? This is, without a doubt, the BEST peanut butter I’ve EVER tasted. It’s sweet, creamy, and just so damn good! The flavor is far superior to any other nut butter I’ve tried to date, even surpassing my deemed favorite, pb&co’s mighty maple. Trust me, this stuff is dangerous folks! I can’t see this lasting long in my pantry at all. Finger lickin’ fabulous! I’m looking forward to trying the other two flavors- hopefully they’ll live up to this one!

I had somewhat of a light lunch- an Amy’s Southwestern Burrito. This was, by far, my favorite of the amy’s burritos that I’ve tried to date. It was stuffed with corn masa, refried beans, and cheese, and it was simply delicious. Very filling, too! I also had a granny smith apple which was perfectly sweet and tart. You know what they say- an apple a day keeps the doctor away! Haha, I think I’m going to start eating an entire barrel of apples daily from now on.

I treated myself to a throat soothing snack this afternoon- tasti d-lite, of course! I got a large cup of creamy coconut + snickers with a new topping this time- a mixture of both peanut butter and chocolate chips!! I’d say this was the best tasti I’ve had to date. Both flavors were outstanding, and the chips added such a richness to the entire thing. However, my eyes were bigger than my stomach in that I could only finish about half of it- mom finished the rest.

To celebrate my feeling better, mom and I went out to Candle for dinner tonight. It felt fabulous to be back in action and able to go out and eat fantastic meals again. I ordered the Asian Style Wrap with wasabi-ginger grilled tofu, brown rice, steamed greens, aduki beans, stir-fried carrots, peppers, and onions in a ginger-miso sauce wrapped in a spinach tortilla, served with an edamame salad and a creamy wasabi dressing. It was exactly what my body was craving; love at first bite! I wanted to go a bit easy on my stomach, so I only ate half of the wrap and packed up the other half to have for lunch in the next couple of days.

And what’s a celebration without dessert? I’m SO predictable, I know, but I just had to order the Carrot Cake once again! I think I’ve had it six times now! Yeah, I know I’m boring you all but if you actually tasted it you’d understand my love for it! And trust me, it gets better every time. I can’t get enough of it. Obv.

Tonight I’m just staying home and relaxing; even though I’m feeling a hell of a lot better, I don’t want to push myself too much so I start regressing once again. As for tomorrow, I’m planning on meeting a friend for dinner and then I’ll be going back to his place to watch movies and such. Sounds good to me. ;)

Off to take shower, get comfy, and then watch the premiere of the City later on.. ahhhh, me and my guilty pleasures!

Goodnight all!
