Serves 1

French Toast:
2 slices of whole wheat bread
3oz vanilla hempmilk, almond milk, etc.
1 tbsp chickpea flour
1/2 tbsp arrowroot powder
1/2 tbsp vegan cane sugar (or agave)
1/4 tsp cinnamon
1/4 tsp pure vanilla extract
pinch sea salt

1. Whisk together the milk, flour, arrowroot, sugar, cinnamon, vanilla, and sea salt until incorporated
2. Dip bread into the mixture on both sides and let excess liquid come off of the bread
3. Place into a preheated non-stick skillet and flip after about 2-4 minutes, depending on how brown you like your french toast.
4. Cut bread in half diagonally, top with caramelized bananas (recipe follows), serve and enjoy! Top with maple syrup (i put a ton!) and some ground flax for an extra kick.

Caramelized Bananas:
1 banana, sliced rather thickly
small handful brown sugar
1 tbsp of earth balance vegan margarine
1 tbsp water
dash of cinnamon

1. In a preheated non-stick skillet, add the margarine, and let it melt a bit.
2. Once slightly bubbling, add the banana slices, and make sure they are covered in the margarine. flip after 2-3 minutes.
3. Add the brown sugar, and cinnamon. Let the bananas get all gooey, but don’t overcook; it will result in mushy bananas.
4. Add tbsp of water, and let it cook out.
3. Place on top of french toast, and savor every bite!
