Serves 1 (Enough for 1-2 sandwiches)

  • 4 oz firm/extra firm tofu, cubed
  • 1 scallion, thinly sliced
  • 1 radish, diced
  • 1/4 red onion, diced
  • 1 small jalapeno pepper, diced (optional)
  • small handful of red grapes, halved
  • small handful of carrot, shredded
  • 2 tbsp tahini
  • 1 tbsp unsweetened soy milk or almond milk
  • 1/2 tbsp lemon juice
  • 1/2 tbsp water
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 1/2 tsp curry powder
  • 1 tbsp vegan mayo (nayonaise or veganaise)*

1. Cube the tofu, and place in a bowl. Add all chopped fruit/veggies, and combine.
2. In a separate bowl, add the tahini, soy milk, lemon juice, water, and spices.
3. Add dressing to the tofu mixture, and stir until incorporated.
4. Enjoy on a sandwich, pita, or alone! Would be great on a sandwich with some avocado.
* If you like a creamier salad, add the tbsp of vegan mayo to the dressing.
