Serves 1 (Enough for 1-2 sandwiches)
- 4 oz firm/extra firm tofu, cubed
- 1 scallion, thinly sliced
- 1 radish, diced
- 1/4 red onion, diced
- 1 small jalapeno pepper, diced (optional)
- small handful of red grapes, halved
- small handful of carrot, shredded
- 2 tbsp tahini
- 1 tbsp unsweetened soy milk or almond milk
- 1/2 tbsp lemon juice
- 1/2 tbsp water
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- 1/2 tsp curry powder
- 1 tbsp vegan mayo (nayonaise or veganaise)*
1. Cube the tofu, and place in a bowl. Add all chopped fruit/veggies, and combine.
2. In a separate bowl, add the tahini, soy milk, lemon juice, water, and spices.
3. Add dressing to the tofu mixture, and stir until incorporated.
4. Enjoy on a sandwich, pita, or alone! Would be great on a sandwich with some avocado.
* If you like a creamier salad, add the tbsp of vegan mayo to the dressing.
