Makes 3 large or 4 medium pancakes (Serves 2, or one REALLY hungry person!)
- 3/4 cup whole wheat pastry flour
- 2 tbsp ground flax
- 1 tbsp cocoa powder
- 1 tsp baking powder
- 2 tbsp vegan cane sugar
- pinch of sea salt
- 6 oz non-dairy chocolate milk
- 2 tsp walnut oil (canola is fine)
- 3/4 tsp vanilla extract
- 2-3 tbsp chunky almond butter
- 3-4 tbsp semi-sweet chocolate chips
- 1 sliced banana
- 1-2 tbsp toasted walnuts
- maple syrup
1. Add all dry ingredients to a medium sized bowl and mix.
2. Mix wet ingredients in a small bowl, and transfer to the dry mixture. Stir until well incorporated.
3. Add chocolate chips and fold them into the batter. To thin out the batter a bit, if desired, add a tsp of warm water.
4. Pour batter onto a non-stick grilled sprayed with cooking spray and form either 3 or 4 pancakes.
5. Enjoy! Top with a generous amount of maple syrup, banana slices, and toasted walnuts. If desired, you can add the walnuts to the batter rather than as a garnish.

These look so awesome. I really want to try them, but I don’t have any flax- is it necessary? Is there anything else I could use instead?
