Makes 3 large or 4 medium pancakes (Serves 2, or one REALLY hungry person!)

  • 3/4 cup whole wheat pastry flour
  • 2 tbsp ground flax
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • 2 tbsp vegan cane sugar
  • pinch of sea salt
  • 6 oz non-dairy chocolate milk
  • 2 tsp walnut oil (canola is fine)
  • 3/4 tsp vanilla extract
  • 2-3 tbsp chunky almond butter
  • 3-4 tbsp semi-sweet chocolate chips
  • 1 sliced banana
  • 1-2 tbsp toasted walnuts
  • maple syrup

1. Add all dry ingredients to a medium sized bowl and mix.

2. Mix wet ingredients in a small bowl, and transfer to the dry mixture. Stir until well incorporated.

3. Add chocolate chips and fold them into the batter. To thin out the batter a bit, if desired, add a tsp of warm water.

4. Pour batter onto a non-stick grilled sprayed with cooking spray and form either 3 or 4 pancakes.

5. Enjoy! Top with a generous amount of maple syrup, banana slices, and toasted walnuts. If desired, you can add the walnuts to the batter rather than as a garnish.
